Describing 'Çiy' in a few words has not been easy for me until today because we were not established with strategically determined principles. On the road, we lined up the indispensable stones of Çiy, together with the team. In the mountains of the Aegean, we started as a restaurant with what my mother calls 'antin kuntin' (simple and plain). We prepared our dishes with what was on the producer's counter in our region, with what our garden wanted to share with us, and with what was on our butcher's counter until today.
We said 'a gift from nature' when establishing Çiy, and we said, 'nourishing from nature while nourishing ourselves from nature.' Today, we are aware that we do not live in a world where the offerings of the universe to us humans can no longer meet our demands. That's why we continue on our path with the intention of improving what we can touch. Starting with ourselves, we walk knowing that what we eat will become us, striving to improve the soil, nature, products, and our relationships with living beings.
With the intention of healing and wanting to meet everyone who wants to heal under the roof of Çiy...
